I see two mistakes in this picture. The first, and most severe, is that this is not a frightened-face 70s Porter Cab. Which it should be. The second is CAPTURING AND RESEARCHING THE ZOMBIES IS A BAD IDEA

I do love a 70s or 80s bronco - lift off rear roof is just cool. I don't see a bad option on the list. btw the full size broncos are dirt cheap these days. And a lot of them share parts across the ford lineup engine wise.

You can do a lot without a garage or welder. I built this in one parking space of a multi-family house.

I'm thinking a budget of up to 2k for the truck itself, and then I'll be fabricating most of the pieces myself. That will keep costs down a little bit.

You can get a shitty welder at Harbor Freight for like $70. It's shitty, but it's perfectly fine for relatively low stress components. I had no issues making new seat brackets or patching the holes in the floor of my MR2 with it. It just burns a bit hot for most sheet metal, so you have to do like a billion tack welds on sheet metal instead of forming a bead. If you're planning on ghett-fabbing the whole thing and going for a post-apocalypse look, it might not matter that the welds are ugly as much as the fact that the welder's cheap and small.

There are other things I'd like to weld too, so I'm just going to get a decent welder. Right now I don't even have a place to weld, so it doesn't really matter that I'm poor now. Using a good welder on this will be good practice for when I want to make things that will actually save me when I roll over.

You know, this is a really tough one for me. I've probably given this way too much thought, as I often conceptualize what I'd want in case of the ZA. I think the most important thing would be to have something reliable. So a damn near bulletproof engine wouldn't hurt. So I'm thinking something like the Dodge 318. I'm also thinking a vehicle with big heavy tires which would be less prone to puncture/damage.
I think I'd start with something like this.
